Potato Candy
This is one of the most popular stops at the festival.
So you did get over to potato candy and try some, right?You bet! It was awesome!
And you asked about the recipe?
Yes.

Okay. First, some call this "mashed potato candy" and that isn't quite right. Because you can't make this with leftover mashed potatoes.
Yeah. I remember Xyra tried once and stopped because she didn't want to waste her sugar.
Makes sense.
Start with a potato that has been boiled or roasted and peeled.
In a large bowl, squish the potato until it resembles mashed. Do NOT add milk or water! Add 1 tablespoon butter and 1 teaspoon vanilla.
Stir in a little powdered or 10x sugar. Then keep stirring in sugar until the mixture resembles a paste or icing. Then abandon your spoon and add in more powdered sugar until the batter is the consistency of play-dough.
Then you break of some and roll it into small balls.
You need lots and lots of powdered sugar for this.
Wow! Sounds easy and difficult at the same time.
